α-Amylases (E.C.3.2.1.1) are enzymes that catalyze the hydrolysis of internal α-1,4-glycosidic bonds in starch to glucose, maltose and maltotriose units. They have approximately 25% of the global enzyme market. They can be obtained from various sources such as plants, animals and microorganisms. Today, amylases are readily available and have almost completely replaced the chemical hydrolysis of starch in the starch processing industry. α-Amylase has been obtained from several fungi, yeasts and bacteria. Alpha-amylases are widely used in food, fermentation, textile, paper, detergent and pharmaceutical industries. However, with the advances in biotechnology, the application of amylase has been expanded in many fields such as clinical, pharmaceutical and analytical chemistry, as well as its wide application in starch sweetening and in textile, food, malting, distilling and pet food industries.
